Sparkling Cider Pound Cake

This recipe brings a light twist to pound cake, and a sweet, apple flavor! Grab a pack of Sparkling Apple Cider and let's get to baking!










 

Ingredients

• 3/4 C. Butter, softened

• 1 1/2 C. Sugar

• 3 Large Eggs, room temperature

• 1 1/2 C. All-Purpose Flour

• 1/4 tsp. Baking Powder

• 1/4 tsp. Salt

Glaze:

• 3/4 C. Powdered Sugar

 

Instructions

  1. Preheat oven to 350ºF

  2. Line bottom of a greased 9x5 loaf pan with parchment paper

  3. In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes.

  4. Add eggs, 1 at a time, beating well after each addition.

  5. In another bowl, whisk flour, baking powder, and salt; add to creamed mixture alternately with cider, beating well after each addition.

  6. Transfer to prepared pan.

  7. Bake until a toothpick inserted in the center comes out clean, 40-50 minutes.

  8. Cool in pan for 10 minutes before removing to a wire rack to cool completely

  9. In a small bowl, mix glaze ingredients until smooth; spoon over the top of the cake, allowing it to flow over the sides.
