Ingredients

  • 4 cups canned navy beans, rinsed and drained (or about 2 cans)

  • 8 slices of bacon, chopped

  • 1 medium onion, finely diced

  • 1 cup Lost Trail Root Beer

  • 1/2 cup ketchup

  • 1/4 cup molasses

  • 1/4 cup brown sugar

  • 1 tbsp Dijon mustard

  • 1 tbsp Worcestershire sauce

  • 1/2 tsp smoked paprika (optional, for a smoky flavor)

  • Salt and pepper, to taste

 

Instructions

  • Preheat Oven: Preheat your oven to 350°F (175°C).

  • Cook the Bacon: In a large skillet, cook the bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set it aside, leaving about 1-2 tablespoons of bacon drippings in the pan.

  • Sauté the Onion: Add the diced onion to the bacon drippings in the skillet and cook until softened, about 5 minutes.

  • Combine Ingredients: In a large mixing bowl, combine the Lost Trail Root Beer, ketchup, molasses, brown sugar, mustard, Worcestershire sauce, and smoked paprika. Stir until everything is well mixed.

  • Assemble: In a large baking dish, combine the navy beans, cooked onions, and bacon. Pour the root beer mixture over the top and stir to combine. Season with salt and pepper to taste.

  • Bake: Cover the dish with foil and bake for 45 minutes. Then remove the foil and bake for another 15-20 minutes, until the sauce has thickened slightly.

  • Serve: Let the beans cool for a few minutes before serving, allowing the flavors to settle.
