Lost Trail Black Cherry Soda is a staple here at Louisburg Cider Mill, and this recipe is the perfect way to try it!
Grab a 4-pack while you are at the store and sip on it while your cupcakes bake!
Ingredients
• 1 White Cake Mix
• 1/2 C. Vegetable OIl
• 4 Egg Whites
• 1 1/4 - 1 3/4 C. Lost Trail Black Cherry Craft Soda
• Black Cherry Jello (divided)
• Cupcakes Liners
FROSTING INGREDIENTS:
• 2 Stick Salted Butter, softened
• 1 tsp. Vanilla Extract
• 1 tsp. Salt
• 4 C. Powdered Sugar
• 1 Tbsp. Half & Half
• 2 Tbsp. Lost Trail Black Chery Craft Soda
• Piping Bag and Tip
•Paper Straws (optional)
• Black Sanding Sugar (optional)
Instructions
Preheat oven to 350º. Add cupcake liners to pan.
Mix the cake mix, oil, egg whites, and soda in a bowl. Mix on medium speed until mixed well.
Mix about 1/2 of the Jello powder.
Add the batter into the cupcake liners until 2/3 full.
Put in the oven and bake for 18-20 minutes. Let the cupcakes cool.
Frosting:
Cream the butter with a mixer until fluffy.
Add in the salt and vanilla. Mix in the rest of the Jello.
Mix the cherry soda and half and half together in a separate bowl.
Slowly mix in the powdered sugar, 1 cup at a time.
Add a little bit of the soda & half and half mixture from above in between
each cup.
Mix for 1-2 minutes until creamy. Stiff peaks should form.
Add the frosting to the piping bag and frost the cupcakes.
Add the sanding sugar on top.
